No-Bake Mediterranean Pita Pizzas

- 4 (6-inch) whole wheat pitas
- 1/2 cup roasted red pepper hummjus
- 1/2 cup sliced grape tomatoes
- 1/2 cup chopped, peeled cucumber
- 1/4 cup sliced olives
- 1/4 cup reduced fat feta cheese crumbles
- 2 Tbsp. extra virgin olive oil
- 1 tsp. oregano
Microwave pitas on high for 10 to 20 seconds.
Spread pitas evenly with hummus.
Top with remaining ingredients. Drizzle with oil and sprinkle with oregano.
Add sliced grilled chicken and/or chickpeas to increase the protein content.
Substitute the tomatoes for roasted red peppers.
Heat oven to 375°F. Bake pita for 8-10 minutes until warm. Prepare as directed.
