- 1/2 cup plain lowfat Greek yogurt
- 2 medium ripe avocados, mashed
- 2 Tbsp. lime juice
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 cups packed shredded chicken breast (about 1 pound)
- 1 stalk celery, diced
- 1/2 cup diced red onion
- 1/2 cup chopped cilantro
- Vegetable dippers (carrots, celery, bell pepper)
Combine yogurt, avocado, lime juice, garlic powder, salt and pepper to a medium bowl.
Add chicken, celery, onion and cilantro; stir to combine.
Serve with vegetable dippers.
A typical lime yields 2 Tbsp. of juice
