Gluten-Free, Reduced-Sugar Peanut Butter Cookies
Feel good about serving these tasty peanut butter cookies. Half the added sugar of traditional recipes and gluten-free.

- 1 cup creamy or chunky peanut butter
- 1/2 cup sugar
- 1 egg
Heat oven to 350°F.
Mix peanut butter, sugar and egg in medium bowl. Spoon mixture by tablespoon onto ungreased baking sheet.
Flatten cookies with fork sprayed with nonstick spray, making a criss cross pattern.
Bake for 10 to 12 minutes or until edges are slightly brown. Transfer to rack to cool.
Natural peanut butter when first opened has a layer of oil on top. Make sure to stir well when first opening the jar or else your cookies will spread too much.
