Colorful Mixed Berry Baked Oatmeal

Easy Mixed Berry Baked Oatmeal Recipe
Ingredients
- 2 cups rolled oats
- 1 tsp. baking powder
- 1/8 tsp. salt
- 1-1/2 cups lowfat milk or plant-based beverage
- 2 eggs
- 1 tsp. vanilla
- 1 Tbsp. unsalted butter
- 1-1/2 tsp. cinnamon
- 3 Tbsp. brown sugar
- 1 banana, mashed
- 2 cups berries
- 1/4 cup chopped pecans
Instructions
- Heat oven to 375°F. Spray a 9-inch square pan or 2-1/2 quart casserole dish with cooking spray.
- Combine oats, baking powder and salt in a medium bowl.
- Whisk milk, eggs, vanilla butter, cinnamon, sugar and banana. Add to oat mixture and stir to combine. Fold in berries. Pour into dish. Sprinkle pecans evenly over top.
- Bake for 40-45 minutes until set.
