Colorful Cabbage, Apple and Walnut Salad

Crunchy and colorful, this anti-inflammatory salad is full of antioxidants from the red cabbage and omega-3 fatty acids from the walnuts.

Crunchy Cabbage, Apple and Walnut Salad

Cabbage may not be the usual green vegetable that you start your salad with but give it a try.

Aim to get 2 cups of fruit and 3 cups of vegetables for a 2,000 calorie diet. Salads are a great way to reach your goals. The Cabbage, Apple, and Walnut Salad provide more than 1-1/4 cups of fruits and veggies in each serving.

1 Tbsp. Worcestershire sauce
2 Tbsp. seasoned rice vinegar
1 Tbsp. apple cider vinegar
1 tsp. Dijon mustard
3 Tbsp. walnut oil
1/2 Tbsp. pure maple syrup
Salt and pepper
3 cups thinly sliced Napa cabbage
3 cups thinly sliced red cabbage
2 medium apples, cored, quartered, thinly sliced
1 cup walnuts

  1. Whisk Worcestershire sauce, vinegars, mustard, oil and syrup in a small bowl. Season with salt and pepper.
  2. Place cabbage, apples, and walnuts in a large bowl.  Toss with dressing.

Makes 4 servings.
