Ultimate Blueberry Bran Protein Muffins

These Blueberry Bran Protein Muffins are lightly sweetened with a great texture. Additionally, we’ve added protein powder to give each muffin a hint of vanilla and provide a good source of protein.

How to Store at Room Temperature

Cool completely and place the muffins in an airtight container or a sealed bag. They’ll stay moist for 2-3 days on the counter.

How to Freeze

Cool completely and place in an airtight freezer bag. Muffins can be frozen for up to 3 months. Warm in the microwave and enjoy!

Blueberry Bran Protein Muffins

Ingredients
  

  • 1-1/2 cups flour
  • 1/2 cup packed brown sugar
  • 1 scoop (25g) vanilla protein powder
  • 1 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 egg, beaten
  • 1-1/2 cups low-fat buttermilk
  • 2 Tbsp. oil
  • 1 ripe banana, mashed
  • 3 cups bran flakes
  • 3/4 cups blueberries

Instructions
 

  • Heat oven to 375°F. Spray muffin pan with cooking spray.
  • Stir egg, milk, oil, banana and bran flakes in medium bowl. Let stand for 10 minutes.
  • Mix flour, sugar, protein powder, baking soda, cinnamon, and salt in large mixing bowl.
  • Add wet ingredients to flour mixture; stir until moistened. Mixture will be lumpy. Fold in blueberries. Spoon batter into muffin pan, filling 2/3 full.
  • Bake for 20 to 25 minutes or until lightly browned.
