Blueberry Bran Protein Muffins
Ingredients
- 1-1/2 cups flour
- 1/2 cup packed brown sugar
- 1 scoop (25g) vanilla protein powder
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1 egg, beaten
- 1-1/2 cups low-fat buttermilk
- 2 Tbsp. oil
- 1 ripe banana, mashed
- 3 cups bran flakes
- 3/4 cups blueberries
Instructions
- Heat oven to 375°F. Spray muffin pan with cooking spray.
- Stir egg, milk, oil, banana and bran flakes in medium bowl. Let stand for 10 minutes.
- Mix flour, sugar, protein powder, baking soda, cinnamon, and salt in large mixing bowl.
- Add wet ingredients to flour mixture; stir until moistened. Mixture will be lumpy. Fold in blueberries. Spoon batter into muffin pan, filling 2/3 full.
- Bake for 20 to 25 minutes or until lightly browned.
