Great-Tasting Nutritious Gluten-Free, Reduced-Sugar Peanut Butter Cookies
Sometimes we want to indulge in a treat but we are keeping added sugar in check. Here’s a great recipe that only has 3 ingredients and can be prepared in minutes.
This is a good recipe for people with diabetes too as there are only 4 g of added sugar and 7 g of total carb in each cookie.
In addition, people avoiding gluten will also love this recipe. No flour? I know it’s hard to believe but just try them. You won’t even miss it. You can enjoy these peanut butter cookies as part of a healthful diet.
Gluten-Free, Reduced-Sugar Peanut Butter Cookies
Feel good about serving these tasty peanut butter cookies. Half the added sugar of traditional recipes and gluten-free.
Ingredients
- 1 cup creamy or chunky peanut butter
- 1/2 cup sugar
- 1 egg
Instructions
- Heat oven to 350°F.
- Mix peanut butter, sugar and egg in medium bowl. Spoon mixture by tablespoon onto ungreased baking sheet.
- Flatten cookies with fork sprayed with nonstick spray, making a criss cross pattern.
- Bake for 10 to 12 minutes or until edges are slightly brown. Transfer to rack to cool.
Notes
Natural peanut butter when first opened has a layer of oil on top. Make sure to stir well when first opening the jar or else your cookies will spread too much.
